The Goal

To design, supply, and install a fresh and functional servery incorporating hot food, deli, and coffee zones, along with a complete back-of-house fit-out. This included dishwashing facilities, dry stores, cook and prep areas, as well as a dedicated hospitality space.

The Brief

As this project began as a new build, it was essential to design the space for immediate, efficient operation while also ensuring long-term futureproofing. The client outlined the expected volume and diversity of customers using the facility throughout the day, making it crucial for us to propose a servery layout capable of supporting this demand. Equally important was the development of a well-planned back-of-house area to ensure seamless service and operational efficiency.

The Outcome

A clean, methodical servery and back-of-house area was designed for versatility, supplied with the appropriate appliances, and installed within the allocated timeframe. A subtle yet sophisticated colour palette creates a relaxing yet mature atmosphere, while the accessible drinks fridges and mesh divides provide clear separation between zones. The back of house achieves an ideal balance between food preparation and cooking areas, alongside dedicated zones for storage and dishwashing. Having the freedom to determine door and wall locations enabled us to optimise the flow, significantly improving overall productivity.

One intentionally selected design feature for this space was the incorporation of neon signage to define the three counter areas. Our aim was to maintain a minimalistic aesthetic while introducing a fun, eye-catching element, and the complementary blue signage delivers this perfectly.

The Design
