The Goal

To expand the existing servery by installing a new counter, enabling a more diverse menu offering, reducing queueing times, and attracting increased custom to the building.

The Brief

We were tasked with designing a brand-new servery within an existing seating area, which presented natural limitations on space. The client required two separate hot food offers, including a theatre cooking element, alongside a newly installed back counter kitchen area complete with a bespoke cold room. With a minimalistic palette dictated by the existing surroundings, it was our role to elevate the space and create a new servery that integrated seamlessly with the current one while maximising functionality and flow.

The Outcome

We designed a streamlined kitchen to work in harmony with the new servery counter, carefully selecting equipment that would improve productivity and support a varied menu offer. Reducing queue times and increasing turnover were key priorities, so we introduced two symmetrical counters with separate pay points, divided by a central theatre-cooking feature to keep service flowing efficiently.

 

When selecting finishes, one challenge was ensuring cohesion with the existing counter opposite. The client had specified certain materials, so we developed the scheme by incorporating these finishes in a way that allowed both zones to work seamlessly together while still complementing the wider space.

 

A standout feature of the project is the bespoke cold room with glazed panelling, designed to be viewed from the customer side. Not only is it a visually striking display, but it also provides an efficient use of space and creates a sense of anticipation as customers approach the servery. The bold black framework contrasts beautifully with the white metro tiles, allowing the fresh produce to take centre stage and bringing a vibrant, engaging focal point to the environment.
