The Goal

To modernise the existing servery improving efficiency, flow, and the overall student dining experience introducing flexible service options and reducing queueing.

The Brief

We were tasked with delivering a full design, supply, and installation package to reimagine the university servery. The brief focused on improving flow through a new service layout, selecting finishes aligned with the existing heritage branding, and creating dual service capability at peak times. In addition to this, we were to design and install a Starbucks coffee bar as both a social hub and efficient service point.

The Outcome

The final scheme delivered a revitalised, efficient, and heritage-conscious servery. A pod-style configuration replaced the previous linear counter layout, enabling a more flexible, free-flow service environment. Two micro-service stations were introduced to support simultaneous hot food, salad, and refreshment service, significantly reducing queueing and improving circulation during peak periods.

 

The new layout also enhanced operational efficiency, allowing easier restocking, clear zoning, and more adaptable menu distribution. Finishes and materials were chosen to modernise the space while aligning with the established aesthetic, ensuring the identity of the servery remained central.

 

A bespoke design feature of the project was the installation of a new Starbucks coffee bar to support busy transition periods throughout the academic day. Designed as both a service point and a social hub, it provides students with a comfortable breakout space for studying, socialising, or relaxing between lectures. Its high-street presence encourages all-day use and helps to ease pressure on the main servery during peak times.
